Week in review 4.12.15

Weekly dog:

This week….

Grateful for: A sunny spring weekend that included several walks and runs and outdoor reading.

Favorite eats: Great Harvest Bread’s salted caramel cookie. THIS COOKIE, Y’ALL. I love it so much. I ate three of them this week (!) It’s a problem. I also made these paleo, whole30 friendly Coconut Crusted Chicken Patties which were easy and tasty. The fry then bake method seemed to keep the chicken from drying out. We ate them with homemade coleslaw from the Well Fed 2 cookbook. I love making a giant batch of coleslaw because then I have ready made veggies available for several meals throughout the week.
